The weekend was a mess of errands. Grocery shopping here, endless laundry loads there and who knows what else (because it was such a blur that I can’t even remember what’s what). But there were some lovely moments and happenings sprinkled throughout, including but not limited to getting some fresh herbs from my Dad‘s backyard garden. Bob and I came away with spearmint, cucumbers and some basil that I was itching to use in one of my favorite summer cocktails, a Basil Collins. It’s inspired by an amazingly refreshing drink from Sparrow Tavern, one of our favorite and frequent Astoria haunts. The drink recipe I have here is not the exact recipe, at least to my knowledge. But it is damn near close and a heck of a lot less expensive. Win win!
2 basil leaves
1 1/2 oz. of gin (I like Bulldog or Hendrick’s)
3/4 oz. lemon juice
3/4 oz. simple syrup
2-3 oz. club soda
Sprig of basil, for garnish
Muddle the basil with simple syrup in a mixing glass.
Add the lemon juice and gin.
Give it a good shake.
Add the club soda.
Pour the drink into a Collins glass (or of you’re like me, any glass will do) filled with ice.
Garnish with basil sprig.
Saturday night was spent on the couch, cocktails in hand (basil Collins for me, mint julep for him) with a marathon of Supernatural on Netflix. Perfection!
