The weekend was a mess of errands. Grocery shopping here, endless laundry loads there and who knows what else (because it was such a blur that I can’t even remember what’s what). But there were some lovely moments and happenings sprinkled throughout, including but not limited to getting some fresh herbs from my Dad‘s backyard garden. Bob and I came away with spearmint, cucumbers and some basil that I was itching to use in one of my favorite summer cocktails, a Basil Collins. It’s inspired by an amazingly refreshing drink from Sparrow Tavern, one of our favorite and frequent Astoria haunts. The drink recipe I have here is not the exact recipe, at least to my knowledge. But it is damn near close and a heck of a lot less expensive. Win win!

Basil Collins
serves 1

2 basil leaves
1 1/2 oz. of gin (I like Bulldog or Hendrick’s)
3/4 oz. lemon juice
3/4 oz. simple syrup
2-3 oz. club soda
Sprig of basil, for garnish

Muddle the basil with simple syrup in a mixing glass.
Add the lemon juice and gin.
Give it a good shake.
Add the club soda.
Pour the drink into a Collins glass (or of you’re like me, any glass will do) filled with ice.
Garnish with basil sprig.

Saturday night was spent on the couch, cocktails in hand (basil Collins for me, mint julep for him) with a marathon of Supernatural on Netflix. Perfection!

p.s. For an extra sweet summery something, you can muddle a couple of strawberries with the basil and call it a strawberry basil Collins (so creative, right?). Strawberries + basil are magical together.

    Oooh, I’m a big fan of basil in drinks (or anything really). I’ve been looking for a new show since I finished season 1 of American Horror Story, got any good recommendations?

      You’ve come to the right place. I’m a tv show-watching machine – and getting stronger by the day. Okay, so obviously Supernatural is awesome. I love it. Reminds me of Buffy a bit. But if you’re in the mood for something different, I’d absolutely go with Sons of Anarchy (the first season is okay, the rest are top-notch), Freaks and Geeks (only 17 epsiodes but SO SO SO worth the watch), Gilmore Girls (witty, smart and fabulous), House of Cards (Kevin Spacey. Need I say more?), The Walking Dead (one of the best shows on tv, in my opinion) and Parks and Rec (One of the few shows that make make me laugh out loud). These are all Netflix-able. I’m not sure what you’ve already seen, but I have more recs, if you’re interested. Just let me know!
